For couple of days now, I've been craving some Finnish egg butter, to spread on top of Carelian pies. Today, I made my own -- for the first time.
Realised the challenge: trying to mix the thick egg yolk-and-butter mash with the bits of egg white that stubborly remain at the bottom of the mixing bowl.
Craving satisfied now however -- I topped my version of Carelian pie and egg butter with some top-to-toe organic, homegrown horsebean sprouts from the sunny window sill.
